Baked Brie Chicken

We eat a lot of chicken in our house and it isn't always easy to keep it interesting. I made baked brie during the holidays and it was such a success that I have been trying to come up with different ways to make it again...and this one is a winner.

Prep Time: 15 minutes (including cooking the chicken)
Cook Time: 15 minutes
Serves: 4


1 tbsp olive oil
2 boneless, skinless chicken breasts, cooked and sliced across the breast
1 package of Pillsbury Crescent Rolls
4 tbsp honey
3 oz brie cheese
1 small pear, sliced (green apple works great, too)


This is a super easy, super quick method to cook a chicken breast. You can use any method you like for this dish though!
  • Preheat oven to 350°F
  • Coat a skillet with olive oil and heat over medium heat
  • Add chicken breasts to the pan and cook for 6 minutes, without moving (sometimes I cover the chicken to prevent the oil from splattering)
  • Flip the chicken breasts and finish cooking for another 5-6 minutes
  • Slice chicken in half across the breast
  • Roll out crescent roll dough and pinch the seams together to form a solid rectangle
  • Evenly spread honey across the crescent dough
  • Place brie in the center of the dough
  • Set the halved chicken breasts on top of the brie
  • Pile your pear slices on top of the chicken breasts
  • Fold the dough around the brie, chicken, and pear
  • Pinch the dough together at the top of the pile so that most of the contents are covered
  • Place the dough ball on a cookie sheet and bake at 350°F for 15 minutes until golden brown
  • Slice and serve

I love serving this on a bed of fresh spinach or romaine lettuce with honey mustard.
