Cheesy Potato Bake

I must have a dozen or so cheesy potato recipes but I have to say that this is by far the easiest and the most delicious. I hosted a Mother's Day brunch at my house this year and organizing breakfast for large groups can be quite I kept all of my recipes as simple as possible.

Prep Time: 5 minutes
Cook Time: 60 minutes
Serves: 10-12


2 pounds of potatoes (I used 2 packages of Simply Potatoes)
1 pint (16 ounces) sour cream
6-8 ounces of shredded cheese (I used a mild cheddar)
A light sprinkle of Salt & Pepper


Preheat oven to 350°F
Mix potatoes, sour cream, cheese, and salt & pepper (I mixed it all right in the pan I was cooking it in).
Bake for 60 minutes.

Super easy, right? And so delicious. Sure to please a crowd.

My mother-in-law and sister-in-law brought their puppies over. It is so much fun watching them interact with each other.
