Greek Turkey Burgers

I am a HUGE burger fan.

I have been looking for new ways to get my burger fix, other than always having red meat, so I picked up some ground turkey at the market.


Prep time: 5
Cook time: 8-12 minutes
Serves: 6

INGREDIENTS:

1.25 lbs (1 package) lean ground turkey
1 small green bell pepper (finely chopped)
1/4 cup crumbled feta cheese
2 small eggs (or 1 large egg)
2 tsp minced garlic
2 tsp ground black pepper
1 tsp salt
2 tbsp Sriracha
olive oil
6 burger buns
3 tbsp hummus
1 cup spinach

DIRECTIONS:


Mix the turkey, bell pepper, feta cheese, eggs, garlic, pepper, salt, and Sriracha in a large mixing bowl using clean hands. When everything is mixed well, form 6 burger patties.


Cook over medium heat in a non-stick frying pan with a small amount of olive oil (about 4 minutes on each side) until the turkey is cooked all the way through. You definitely don't want to eat undercooked turkey.

Spread hummus (I love the red pepper kind) on your burger bun, top with spinach and a cooked turkey patty.


Any leftovers will keep in the fridge but only for a couple of days. I scrambled our leftovers with eggs the next morning. It was fantastic!

These turkey burgers are definitely a new favorite.
